Dinner Tonight: Salmon, Green Beens, & Cucumber Salad
As you probably know, I love to cook… For some reason I was feeling inspired on my way home from school today, so I decided to prepare a nice dinner. Probably b/c I haven’t cooked much in the last few weeks, and in the last few days especially we’ve eaten nothing but junk! I forgot Keith is working late tonight….
Anyway, it turned out so well I just thought I’d share the recipe. Hehe, I guess I need a fancy name for everything like a chef, eh? nah! I’m terrible at measurements, so if you try to make this you’ll just have to eyeball it.
Salmon:
1/2 lb fillet of salmon
a few tablespoons of margarine (we use Smart Balance)
a few tablespoons of lemon juice (1 lemon, or bottled is fine)
a good squirt of Dijon mustard
zest from the lemon
a few sprigs of dill chopped finely
2 cloves of garlic, chopped finely
salt & pepper to taste (I threw in some Mrs. Dash too)
Melt the margarine in the microwave, then mix all the remaining ingredients, except for the salmon of course. Line a baking dish with foil to ease cleanup, then put some of the mixture down. Cut the 1/2 lb of salmon into two pieces, then spoon the rest of the mixture over the top. Bake at 400 degrees for 12-15 minutes.
Green Beans:
I bought a big bag full of fresh green beans — a pound maybe?
cut the ends off and cut them in half, wash them really well
put in a pot, cover with chicken broth.
add a couple cloves of chopped garlic
season with salt, pepper, Mrs. Dash, whatever you feel like adding
simmer until tender
Cucumber Salad:
2 English/burpless/seedless cucumbers
1 red bell pepper
splenda
white wine vinegar
salt & pepper to taste
cut the ends off the cucumbers, then peel part of the skin so you’ve got stripes. use a mandelin (or just a knife if you’re that good) and slice up the cucumbers. cut the bell pepper into small pieces. toss together with salt, pepper, splenda, and vinegar. I know there should be measurements there, but I just keep adding things until it tastes right. let it sit for a few minutes to kind of pickle, and voila!
That was dinner tonight! YUM!
